Easy Lamb Roast

A proper outdoor roast.  This butterflied leg of lamb is marinated with garlic, rosemary, lemon and olive oil, then slow-cooked on the COBB until tender and full of flavour. It’s an easy one to serve with vegetables, potatoes or whatever sides you love most.

Raw materials

Crushed garlic 3 tbsp
Finely chopped rosemary 1 tbsp
Olive oil u00bd cup
Lemon juice u00bd cup
Coarse salt 2 tbsp
Ground black pepper 1 tbsp
Lemon zest 1 tsp
Leg of Lamb 2 kg

Execution protocol

MAKE THE MARINADE

In a small bowl, whisk together the garlic, rosemary, olive oil, lemon juice, salt, pepper and lemon zest.

PREP THE LAMB

Pour half of the marinade over the lamb, then tie it together with string.

MARINATE

Place the lamb in a resealable plastic bag. Pour in the remaining marinade, coat well and leave to marinate for 1 hour.

LIGHT THE COBB

Light 1 CobbleStone and wait until it has stopped smoking. Add the Griddle+, Fenced Roast Rack and Dome, then preheat for 5 minutes.

WRAP AND BASTE

Remove the lamb from the bag and place it on foil. Before wrapping, baste it with the marinade from the bag.

START THE ROAST

Place the wrapped lamb on the COBB. Cook for 30 minutes per 500 g of lamb.

UNWRAP AND SAVE THE JUICES

Once the lamb has cooked for the allocated time, unwrap the foil and pour the cooking juices into a bowl. Use this as a gravy for the lamb or vegetables.

FINISH UNDER THE DOME

Place the lamb back on the COBB, cover with the Dome and cook for another 20u201330 minutes.

REST THE LAMB

Remove the lamb from the COBB and place it on a cutting board. Let it rest for 10 minutes.

CARVE AND SERVE

Carve the lamb and serve with vegetables or your favourite sides.
